Renowned chef and restaurateur, Tommy Klauber was born and raised in his family's restaurant and hospitality businesses. He earned a degree from the Culinary Institute of America and a diploma from La Varenne’s Ecole de Cuisine (Paris, France). On his own, Tommy has opened three major restaurant operations: Pattigeorge’s (Longboat Key, FL), Fete Catering with his wife Jaymie, and Polo Grill and Bar (Lakewood Ranch, FL). The businesses reflect his diverse culinary background, global influences and his commitment to fresh, local, sustainable food. An Ironman competitor and tri-athlete, Tommy developed Polo Fit, a menu dedicated to clean eating, organic foods and creative culinary twists. The Polo Menu reflects his support of local, delicious flavors with a healthy attitude.

Favorite Menu Item: Grass-Fed Organic Burger on a Pretzel Bun Born and raised in New York City, Jaymie Klauber moved to Sarasota in 1995. Her early career began as a professional fundraiser. In 2004, she became involved in the restaurant industry through her husband, Tommy. She began by managing Pattigeorge’s Restaurant on Longboat Key, while launching a small, boutique, off-site catering business called Fete Catering. Fete Catering grew substantially every year, and has since become a major, established catering entity in Sarasota & Manatee counties. The need for banquet space and a larger catering kitchen prompted she and Tommy to acquire the 25,000 square foot restaurant & banquet facility in Lakewood Ranch. They moved Fete Catering to this facility and opened the Polo Grill and Bar, becoming important anchors and focal points in Lakewood Ranch. Jaymie is recognized as an accomplished business woman, and an asset to the Gulf Coast area, as she participates in various non-profit activities benefiting children and animals. Jaymie is an equestrian enthusiast and currently owns nine horses. She is a frequent polo player, a member of the Sarasota Polo Club and has been an influence in establishing polo as a recognized sport in Sarasota.

Originally from Long Island, NY, Kathy owned a wholesale food distribution company for twenty years. She then became a Certified Microsoft Systems Engineer and eventually opened the accounting department for Polo Grill and Bar. Kathy ensures everyone is paid on time, administers all of our records and oversees our business financials. When she's not crunching numbers, she enjoys spending time with her husband, Rich, their grandchildren and their furry friends.

As a former Oklahoman, Jordyn has spent the last eleven years living, working, and playing in beautiful Lakewood Ranch, Florida. Jordyn has been with Polo Grill/Fête Catering for a total of 3 years. She started off as a host in the restaurant where she learned the ins and outs of Polo Grill. In October of 2013, she joined the Fête team as the Catering Assistant where she provided clerical and administrative support - all the while, offering impeccable care and attention to our clients. After less than a year she was promoted to Marketing & Administrative Coordinator. Having such a great depth of knowledge about both businesses, Jordyn was the "go-to-girl" for everything! Most of the time you could find her behind the scenes making sure every event goes off without a hitch. Recently, Jordyn was promoted to Catering Sales Manager. For fun and adventure, Jordyn spends her free time doing what she loves: spending time with family, hanging out at the beach, and watching college football (Hook 'em Horns!).

Jason's passion for cooking started when he was around 5 years old. Fast forward 25+ years later and his love is still going strong. Jason joined the Fête team during the middle of season in December of 2013. He loves the stress and high pace that catering has to offer, "there's always something new". As to how catering is different than working in a normal restaurant, "It is always a different venue. You can be working in a 6 million dollar mansion one day then the next be cooking for 500 people in our ballroom." Jason also won the prestigious James Beard award in 2011.
Director of Catering Operations
Originally from Upstate New York, Luke’s passion in the hospitality industry stemmed from growing up in his parents Italian restaurant. It only intensified when he went to culinary school in Rhode Island at Johnson & Wales University. Luke comes to Fête Catering from working in resorts as a Food and Beverage Manager with Ocean Properties. His experience and knowledge of club-oriented banquets and events will bring Fête Catering and Polo Grill to next level. In his spare time Luke enjoys group beach volleyball and other athletic activities and events. You will often find Luke in the kitchen cooking up his newly inspired ideas or creative influences from various different sources.
